In addition to sharing our passion for wine with guests in our restaurants, Rockpool Dining Group is excited to offer wine and beer education and experiences at our numerous restaurants and outside the walls of our businesses. Our Master Sommelier’s and Professor of Beer, along with our talented team of wine and beer professionals, leads a range of custom wine and beer education programs for personal enrichment, entertainment, and business skill development.
Private Wine Events and Education
Rockpool Dining Group offers private wine and beer education and experiences for corporate gatherings, leadership retreats, and more. Engagements are designed to align our insights and expertise with the particular interests of your group, whether your audience is capping off a day of workshops, or learning to navigate a wine or beer list with confidence and skill for client entertainment scenarios.
Sebastian Crowther MS – Beverage Director Rockpool Bar & Grill Melbourne, Rosetta and Spice Temple
Sebastian has travelled the world far and wide gaining expertise in the wine and hospitality industries. Most recently Sebastian was part of the Merivale Group wine team where he assisted in the implementation and management of wine programs in Uccello and Felix restaurants, among others.
Sebastian has also headed up the wine team at the renowned Royal Mail Hotel in Dunkeld, regional Victoria. It was here he won the Judy Hirst award for best wine list in Australia. On returning to Sydney, Sebastian worked with the team at Sixpenny and China Group before starting at Rockpool Est. 1989 in 2014. The following year, he won the Sydney Morning Herald’s ‘Sommelier of the Year’ award. During this time, Sebastian undertook the Court of Master Sommeliers exams. In 2013 he passed his final exam in London after five years of study, making him one of only two Master Sommeliers in Australia.
Sebastian is heavily involved in the Australian wine industry as a consultant, educator and wine judge.
Richard Healy – Head Sommelier Rockpool Bar & Grill Sydney
Richard is the head sommelier at Rockpool Bar & Grill Sydney. Having travelled extensively through Europe and the Americas, Richard’s experiences abroad fortified his leap into a career in wine.
Prior to his current position, Richard was general manager and beverage director of Rockpool Est. 1989 and head sommelier at Rockpool Bar & Grill Perth. During Richard’s tenure, both Rockpool Est. 1989 and Rockpool Bar & Grill Perth earned numerous awards for their wine programs.
Richard has completed his Wine and Spirit Education Trust Diploma and achieved a Court of Master Sommeliers Advanced Certification in Toronto, Canada.
Dom Dighton – Urban Craft Brewing Co, General Manager
Dom has been working with Urban Purveyor Group (now Rockpool Dining Group) for over 25 years.
Dom’s love of beer stretches back to his travels throughout Europe in his early 20s. It was during these travels he visited Munich’s famous Oktoberfest and became enamoured with Bavarian bier and brewing techniques. So much so that upon returning to Sydney, he began work in cellars of Sydney Bavarian bier institution and UPG flagship venue, Lowenbrau Keller (now Munich Brauhaus).
Dom now heads up Urban Beverage Operations, overseeing the import and management of all beverages group wide. Dom is also the mind behind some of Urban Brewing Co’s finest brews. As Rockpool Dining Group’s resident beer professor, Dom oversees the creation and production of all Urban Brewing Co. beer. If there is anything you ever wanted to know about beer – Dom’s your guy!

Qantas Rockpool Sommeliers and Mixologists
This expert team, known as the Qantas Rockpool Sommeliers and Mixologists, were tasked with selecting the Champagne, wine and creating cocktails for Qantas domestic and international flights and lounges. Qantas Rockpool Sommeliers blind taste, review and select from 1,200 Australian wines and Champagnes over four days in July, each year. They also prepare tasting notes for Qantas, and provide recommendations for food and wine matching in the lounges and inflight. The Rockpool Qantas Mixologists also design monthly cocktails for lounges both domestically and internationally.In 2015, Neil Perry assembled some of Australia’s most awarded and recognised sommeliers and mixologists from across the Rockpool restaurants, and embarked on an exciting new direction for Qantas’ entire wine and beverage program.
The team’s expertise in wine and mixology takes the Rockpool experience even further, delivering a complete restaurant experience on the ground and in the air.
