Rockpool Dining Group can tailor bespoke workshops and masterclasses for personal enrichment, entertainment, and skills development.
Classes can be delivered in a private events or dining space at a Rockpool Dining Group restaurant or bar, or off-site at corporate gatherings, leadership retreats. or other locations.
Engagements are designed to align our insights and expertise with the interests and needs of a particular group, whether the audience is capping off a day of workshops, or learning to navigate a wine or beer list with confidence and skill for client entertainment scenarios.Classes are designed and hosted by a team of talented sommeliers, bar managers and beer experts.
Jonathan Ross MS – Beverage Director, Premium Restaurants VIC
Jonathan joins the Rockpool Dining Group from the USA. Most recently Jonathan was the Head Sommelier at New York’s Eleven Madison Park where for 5 years he led the wine team on its climb to the no. 1 spot on San Pellegrino’s World’s 50 Best Restaurant list.
Prior to his time at Eleven Madison Park, Jonathan held numerous management positions and sommelier roles throughout New York City at a variety of Michelin starred restaurants. Jonathan is one of the world’s 249 Master Sommeliers, and one of only five in Australia. He teaches and examines on behalf of the Oceania and Americas Chapters of the Court of Master Sommeliers. Jonathan is an educator for the Guild of Sommeliers, sits on the Sommeliers Australia committee, and mentors dozens of sommeliers here in Australia. In 2015, Jonathan won the American Top Sommelier competition beating out over 300 other competitors in a multi-round national competition. Later that year, he was also featured on Esquire’s documentary series, ‘Uncorked’.
Jonathan is deeply connected to the global wine community, and even makes a bit of his own wine too!
Richard Healy – Wine Director, Premium Restaurants NSW/QLD
Richard’s extensive travels through Europe and the Americas fortified his leap into a career in wine.
Prior to his current position, Richard was General Manager and Beverage Director of Rockpool Est. 1989 and Head Sommelier at Rockpool Bar & Grill Perth. During Richard’s tenure, both Rockpool Est. 1989 and Rockpool Bar & Grill Perth earned numerous awards for their wine programs.
Richard has completed his Wine and Spirit Education Trust Diploma and achieved a Court of Master Sommeliers Advanced Certification in Toronto, Canada.
Ryan Gavin – National Bar Manager, Premium Restaurants
Ryan commenced with the Group in 2009, as junior bartender at Spice Temple Sydney. Following a brief sojourn overseas, he returned to the Group as junior bartender at Rockpool Bar & Grill Sydney and within five years had progressed to Bar Manager, which is a position he held for five years before assuming his current role. Ryan develops and maintains innovative cocktail programs across the Group’s premium restaurants and bars, and also trains, coaches and mentors a national bar team.
Ryan has travelled extensively in Europe and the United States and lived in Rome for three years from 2007-2010. His travels have taken him to Sweden, where he immersed himself in the craft of gin distilling during a visit to the Hernö Distillery. His work has also taken him to the Highlands of Jalisco, Mexico, where he studied the art of small-batch tequila making at Hacienda Patrón.
