Rockpool Dining Group makes waves with return of Blue Water Grill

Tuesday, 16 October 2018: Rockpool Dining Group and Culinary Director Neil Perry are bringing Blue Water Grill back to Sydney diners after a 30-year hiatus with a six-day pop-up in the heart of the CBD.

Blue Water Grill will open in the group’s Eleven event space at 11 Bridge Street from Monday, 19 November to Saturday, 24 November with lunch and dinner sittings daily.

Serving the spanking-fresh seafood with Asian flavours that Blue Water Grill was renowned for, and which defined Perry’s reputation as a champion of excellent and sustainable catch, the retro seafood diner will offer an menu of around 20 hallmark dishes, an ‘80s-style cocktail list and an accessible list of Australian wines.

Perry will be on the pans frying fish, stir frying squid, char-grilling seafood and mustering up fragrant green curry, coconut sambal, chilli sauces and salsas – the quintessential dishes that put his first restaurant and super-fresh seafood straight off the boats on Australia’s culinary map.

In another blast from the past, seafood expert and former Blue Water Grill Manager John Susman, who helped Perry establish the restaurant’s superb seafood credentials, will dust off his dinner jacket and work the floor for a service.

Blue Water Grill opened at the north end of Bondi Beach in 1986 with many of the Asian-inspired dishes serving as a precursor to those on the menu today at Rockpool Bar & Grill and Spice Temple.

“I’m having a flashback thirty-odd years,” says Perry. “I’ve dug out the original menus and summoned up the old flavours – all we need to do is chuck some sand on the floor and it is Blue Water Grill circa 1986 revisited.”

“My vision has always been to use the freshest seafood caught and harvested in a sustainable manner and work as directly with the fishermen as possible, then take responsibility to dry fillet and cook with care.”
