From restaurant Bar Manager to the Group’s Beverage Director, Ali Toghani’s rise through the business has been steadfast since he joined full-time in 2013.

Ali worked on a casual basis at The Argyle for several years while studying at university, before taking on a full-time role as Bar Manager/Assistant Restaurant Manager at The Cut.

A man of many hats and numerous talents, he went on to become an Assistant General Manager at El Camino Cantina in The Rocks, then Assistant General Manager at Saké The Rocks, before being promoted to General Manager at Saké Double Bay, then Assistant Food & Beverage Director for the Saké brand, and finally Beverage Director for the Group’s fleet of 80+ restaurants in 2019.

Ali did not set out to work in hospitality. He studied Architecture and Design at university, which continues to be a big passion.

“But after working for a few years in hospitality and growing within the company, I realised that designing drinks, learning about wine and beverage, making the guest experience that much better through wine and beverage, and working with the challenges of hospitality to make a business better and more profitable was another passion,” he explains.

“I really enjoy problem-solving, quick thinking and attention to details and hospitality offers all of these plus the interactions with guests, team member and in my current role, suppliers.”

Based at the Group’s head office in The Rocks, Ali is the man to ask about all things beverage-related: the best bourbon to buy someone for Christmas gift; best gin combination for Japanese-inspired gin bowl, the background story to an Old Fashioned and how to make one with a unique twist.
